Welcome to Fool your Family Friday!

I recently purchased this cookbook by Jessica Seinfeld. For those of you who are not familiar with it, every single recipe in the book sneaks in a healthy serving of veggies.

I'm sure that most of you Moms out there can relate when I say that my kids are SUPER picky eaters.

I've been a vegetarian for 21 years, so I'm used to making a separate dinner for myself every night, but over the years my kids have gotten pickier and pickier (is that even a word?).

I'm so sick of the pleading at the dinner table and throwing out uneaten food! Can I get an Amen?!

I've decided to start using this cookbook on a daily basis and my family will be the guinea pigs. I'll share a new recipe each Friday with the "Midnight Scramper" seal of approval!

Without further ado, here is what we had for dinner tonight. It was a huge hit! I doubled the recipe and EVERYONE went back for seconds.

"Buttered" Noodles

"Simple buttered noodles make most kids very happy. In this version, they're getting their veggies, too."



8oz. of your favorite pasta noodles (I used Penne)
1/2 cup of butternut squash puree*
1/4 cup of nonfat milk
2 Tablespoons of butter
2 Tablespoons of grated Parmesan
1/4 teaspoon of salt



  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package directions until al dente.

  2. Drain, return the pasta to the warm pot, and stir in the squash puree, milk, butter, Parmesan and salt.

YUM-O!


* To make the butternut squash puree, just steam it and put it in a blender or a food processor. I was able to get about 3 cups of puree, which I pre-measured into 1/2 cup servings and froze to use as needed.


I bought my butternut squash at Trader Joe's in the refrigerated section by the salads. The squash was already cubed, pre-washed and ready to cook. Couldn't be simpler!

I love this book! I also have The Sneaky Chef book. My 4-year old now thinks it normal to add orange puree (carrot & sweet potato) to boxed mac & cheese. I love it too. I haven't tried her brownies with spinach yet. Thanks for your recipe review.
