HAPPY 4TH!!

I still can't believe that it's already July 4th. Where is this year going?! In honor of the holiday, the kids and I baked cookies and bought sparklers for our neighbors. Instead of delivering them in a plastic container, I decided to come up with something a little festive. We took empty Pringles cans and decorated them to look like firecrackers. We just used up scraps from my paper bin and found some star ribbon that I've been saving for just such an occasion. Some of the cans we filled with cookies and some of the cans we filled with sparklers. For the lid, I punched 6 holes and put garbage bag twist ties through the holes. Next I cut different sizes of stars with my Cricuit machine and let the kids run them through my Cuttlebug embossing folders. Then we just stuck them onto the garbage ties with glue dots. The whole thing came together in under ten minutes!
Here is the recipe for my DELICIOUS cookies:
  • 1 cup butter
  • 1 1/2 cups sugar
  • 2 eggs
  • juice of 1/2 a lemon
  • 2 Tablespoons vanilla extract
  • 2 1/2 cups flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 sugar
  1. Beat butter and 1 1/2 cups sugar until fluffy. Add eggs, lemon juice and vanilla extract.
  2. Add flour, baking powder and salt. Mix well, cover and chill for 20 minutes.
  3. Shape dough into 1-inch balls (I used my Pampered Chef small scoop)
  4. Roll balls in 1/4 of sugar and place on ungreased baking sheet.
  5. Bake for 12 minutes at 350 degrees.

*Makes about 5 1/2 dozen cookies
