Fool Your Family Friday!

Hey kids! Ready for another recipe to Fool Your Family?
Chicken Alphabet Soup

Here's what you'll need

3 quarts reduced-fat low-sodium chicken broth
1 chicken breast on bone, rinsed and dried, skin removed
1/2 teaspoon salt
1/2 cup alphabet pasta
1/4 cup cauliflower puree
1/4 cup sweet potato puree


1. Bring the broth to a boil in a large pot. Sprinkle chicken with salt and carefully slide into the broth. Immediately turn off the heat, cover the pot and let sit until the chicken is cooked through, about 25-30 minutes.

2. Remove the chicken and let rest until cool enough to handle. Pull meat off of the bone, cut into bite size pieces and set aside.

3. Bring the broth back to a simmer and add the pasta. Stir in the cauliflower and sweet potato purees and simmer until the pasta is cooked, about 6 minutes. Stir in the chicken pieces and serve.

This recipe will be great for all of that leftover Thanksgiving turkey!
