Fool Your Family Friday!



Ready to fool your family again?

Doughnuts

Here's what you'll need to get started:
Nonstick cooking spray
1/2 cup brown sugar
1/2 cup canned pumpkin puree
1/2 cup sweet potato puree
1/2 cup milk or buttermilk
1 large egg white
1 tablespoon melted butter
1 teaspoon vanilla extract
1 cup flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon cinnamon or pumpkin pie spice
1/2 cup powdered sugar


1. Preheat oven to 350. Coat a doughnut mold or 12 cup mini muffin tin with cooking spray.

2. In a large bowl, beat together the sugar, pumpkin and sweet potato purees, milk, egg white, butter and vanilla. Add the flour, baking soda, baking powder and spice. Mix until completely incorporated.

3. Divide the batter among the muffin cups or fill the doughnut mold. Bake until the tops are lightly browned and a toothpick comes out clean when inserted, 20-25 minutes. Turn the doughnuts out on a rack to cool. Dust with powdered sugar when completely cooled.
