"Take a store-bought pancake mix, fortify it with grated apple, a little beet puree and some ricotta cheese - it's a full-protein meal"
Here's what you need
Here's what you need
3/4 cup water
1/2 cup ricotta cheese
1/4 cup beet puree
1 teaspoon vanilla extract
1/2 teaspoon cinnamon
1 cup pancake mix
1/2 cup grated apple
nonstick cooking spray
1 tablespoon canola or vegetable oil
maple syrup and fruit for serving
- In a blender, combine the water, ricotta cheese, beet puree, vanilla and cinnamon.
- Pour mixture into a bowl and add pancake mix and apple. Just stir until combined.
- Coat a griddle or skillet with nonstick cooking spray. Spoon batter using about 1/4 cup batter for each pancake.
- Serve warm with syrup and/or fruit.
