Welcome to Fool Your Family Friday!

Wow - If anyone knows what happened to April, let me know!
I can't believe that we're already into May!

Thanks for stopping by on this beautiful Friday.
Here's todays recipe to Fool Your Family...

CHOCOLATE PUDDING

Here's what you'll need:
1/4 cup trans-fat-free soft tub margarine spread
1 cup avocado puree
1 cup confectioners' sugar
1/2 cup unsweetened cocoa powder
1 teaspoon pure vanilla extract
1/4 cup cornstarch

In a medium saucepan, melt the margarine over low heat. Stir in the avocado puree, sugar, cocoa powder and vanilla. Cook, mashing well with a silicone spatula to smooth out any lumps of avocado, until the mixture thickens, 3-4 minutes. Off the heat, gradually stir in the cornstarch. Serve warm.

Avocados are the only vegetables that are loaded with monounsaturated fat, which helps lower cholesterol levels in the blood to keep kids heart-healthy.

They're also a super source of soluble fiber, which helps stabilize blood-sugar levels.

And they're full of vitamin E, which protects healthy cells and helps heal kids' cut and scrapes.

I'll be back tomorrow with a new challenge from Lauren and an introduction to some new members of our team!
Until then...
