Happy Friday and thanks for stopping by today to Fool Your Family! FRENCH TOAST
4 large eggs
2 tablespoons of sweet potato OR pumpkin OR banana puree
1/4 teaspoon cinnamon
4 slices whole wheat bread
nonstick cooking spray
2 teaspoons butter or margarine
flaxseed meal (optional)
maple syrup, powdered sugar and/or fresh fruit for serving
1. In a shallow bowl, whisk the eggs, puree and cinnamon. add the bread slices and turn them in the mixture to soak for 30 seconds to 1 minute. Don't let the bread get too soggy.
2. Coat a nonstick griddle or large nonstick skillet with cooking spray and set it over medium high heat. When the pan is hot, add the butter. When the butter sizzles, add the soaked bread slices and sprinkle with flaxseed meal if using. Cook until golden brown on the outside, 2 - 3 minutes per side. Serve warm with syrup, powdered sugar and/or fruit.
