Fool your family Friday!

What am I talking about?? Click here to get caught up. This week, we made brownies with spinach and carrot puree in them. Yes....you read that correctly. I didn't tell my kids the "secret" ingredients until after they had tasted them. I'm ashamed to admit it, but the kids and I sat there and ate the ENTIRE pan of brownies. They were so good, so rich, so moist, sooooo yummy.
Here's the recipe
BROWNIES
"These brownies fool everyone! You won't believe how scrumptious they are (or how good they are for you) until you make them yourself. Just don't serve them warm - it's not until they're completely cool that the spinach flavor totally disappears."
  • Nonstick cooking spray
  • 3 ounces chocolate chips
  • 1/2 cup carrot puree
  • 1/2 cup spinach puree
  • 1/2 cup firmly packed brown sugar
  • 1/4 cup unsweetened cocoa powder
  • 2 Tablespoons butter
  • 2 egg whites
  • 3/4 cup flour
  • 1 Tablespoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt

  1. Melt chocolate
  2. Combine melted chocolate, vegetable purees, sugars, cocoa powder, butter and vanilla with a whisk until smooth.
  3. Whisk in egg whites. Stir in flour, baking powder and salt.
  4. Pour batter into a greased 8 x 8 baking pan and bake at 350 degrees for 35 minutes.
  5. COOL COMPLETELY and cut into 12 bars.
