TWICE-BAKED POTATOES
Here's what you'll need:
4 large baking potatoes
1 cup cauliflower puree
1/2 cup reduced fat sour cream
2 tablespoons margarine or butter
1 clove garlic, minced
1/4 teaspoon EACH of salt and pepper
2 slices of turkey bacon, cooked and crumbled
1. Preheat oven to 400.
2. Cook potatoes in microwave. When they are cool enough to handle, cut them in half lengthwise and scoop out the pulp, leaving a thin shell.
3. Mash the potato pulp with the cauliflower puree, sour cream, margarine, garlic, salt and pepper. Spoon the mixture back into the potato shells. Place the potatoes on a baking sheet and bake for 15 minutes. Sprinkle with bacon.

ooooh. These sound Delicious Mackenzie!! -- especially since I already mash up cauliflower in potatoes, or I mix it in with rice and chicken gravy for my littlest one, she has no idea, and eats it up. Love it. Thanks for sharing this!
